Roasted Tomato and Garlic Soup
You guys loved this soup, so it only makes sense that it's the first recipe I drop.
Do you ever look up a recipe online, get redirected to a blog, and then find yourself scrolling and scrolling and scrolling through endless anecdotes, photos, and anything else BUT the actual recipe? We HATE that, so we won’t be doing it over here. Ingredients and Instructions. Plain and Simple. Enjoy.
Ingredients:
10 Roma Tomatoes
6-7 Campari Tomatoes
2 Yellow Onions (skinned and quartered)
3 Heads of Garlic (skin on, sliced in half)
1/2 cup Olive Oil
4oz Butter
1 cup Heavy Cream
2 oz Red Wine Vinegar
Basil (Preferably fresh, but freeze dried works
Salt and Pepper to taste
1oz red pepper flakes
Crema (for garnish)
Freshly Grated Parmesan Cheese (for garnish)
Cooking Instructions:
Thoroughly wash and dry all of your tomatoes.
In a baking dish or sheet pan, add your tomatoes, onion, and garlic. Coat with a generous amount of olive oil, and season with salt and pepper. Make sure to really coat the garlic. Mix well until evenly incorporated.
Bake uncovered at 375F for 45 minutes or until veggies are soft.
Switch oven to broil, and cook for about 5 minutes, or until the tops of the vegetables start to char.
In a large pot on medium/high heat, add butter, tomatoes, and onions. Using tongs, squeeze the garlic out of the skin into the pot as well.
Add basil, salt, pepper, red pepper flakes, heavy whipping cream, and bring to a simmer.
Kill the heat on the stove, and using either an immersion blender or a regular blender, blend the soup until it is a smooth velvety consistency.
Stir in red wine vinegar
Transfer soup to a bowl, and garnish with fresh basil, Mexican crema, a drizzle of olive oil, and freshly grated Parmesan cheese.
* Goes great with crispy bread, croutons, or a melty grilled cheese ;)

I am not going to sit here and tell you how to make a grilled cheese, because…let me honest. We know. However, I did get a lot of questions about MY grilled cheese, so here are your answers.

My Bread:
The bread that I use is local to Austin, TX and is from a bakery called “Easy Tiger”. It is just a classic round sourdough loaf that is pre-sliced. If you aren’t near Austin, Im sure there are plenty of great sourdough alternatives. Shop Local!
AND YES - I PUT MAYO ON MY GRILLED CHEESE. FIGHT ME.
